Crunchy Salad Sandwich


Try this quick healthy sandwich to wrap up Nutrition Week

(makes 2 sandwiches)

  • 1 avocado – peeled and stoned
  • 1 teaspoon lemon juice
  • 4 slices wholegrain bread
  • 1 small carrot – peeled and grated
  • 6 slices of beetroot – patted dry with paper towel
  • 1 lettuce leaf – shredded
  • 1 medium tomato – cut into 4 slices
  • 1/3 cup snow pea sprouts


Put the avocado in a small bowl and mash with a fork.

Add the lemon juice and mix well.

Spread the avocado onto all 4 of the bread slices.

Top two slices of bread with carrot, beetroot, lettuce, tomato and snow pea sprouts.

Pop the remaining 2 slices on top.

Cut, serve ….ENJOY!
