Honeyed Greens

Serves 4 people


6 cups of assorted green vegies in season  (eg zucchini, leek, celery, asparagus, green beans, Brussels sprouts, broccoli, green capsicum, snow peas, bean shoots)


2 tablespoons honey

2 tablespoons vinegar

1 teaspoon olive oil

1 teaspoon reduced-salt soy sauce

1 teaspoon ginger – finely chopped


Slice vegetables to similar sizes for even cooking

Steam vegies for 6-8 mins or microwave on HIGH (100%) for 3-4 mins, until crisp but tender

Place dressing ingredients in a saucepan and simmer over low heat until honey dissolves or microwave on HIGH (100%) for 1 minute

Drain vegies and toss through dressing

Serve immediately


This recipe is a great way to empty out you crisper, or to introduce new green vegies to your family

Try using garlic instead of ginger for variety
